Good Evening!
We just finished our last immersion program just over a week ago, which went beautifully. The programming seemed impactful, people cooked and laughed together, and we had fun out in nature and in the evenings around the fire. We also had some entertainment as well.
This time, though, we saw something interesting happen, perhaps due to the small size of the group and more intimate setting of our mountain inn. People came together quickly and opened up about their lives in a way that took the idea of healing way beyond food. Indeed, healing is about so much more than food; it’s about every aspect of our lives, and it’s a process that never ends.
Kim and I are seeing that this program has the potential to promote healing through plant-based nutrition, but also in other ways. It’s also about human connection and whole healing. We are excited to see how we can continue to evolve in this direction.

As you may have read in our last newsletter, we thought we would offer a shorter culinary program next to see if people might like this format and announced this 10 days ago. Amazingly, we failed to get a single response. Instead, people have continued writing in expressing interest in the longer healing immersion, so we cancelled the shorter events and just went live with another healing immersion, scheduled for May 18 – May 24 (which also includes lots of hands-on and other culinary instruction, even more than we could have fit into the shorter culinary-only events).

I hope you all are doing well, and that you might consider joining us here at Ivy Terrace in Saluda, NC.
